King Saint Louis began constructing the town in the 13th century. It was endowed with a monumental 1,600-meter wall, and today, the ramparts still allow visitors to walk around the medieval city.
Eight centuries later, it remains one of the best-preserved medieval complexes in France.
The 33-meter-high Tour de Constance was initially used as a residence for Saint Louis, but later became a prison for women condemned in Languedoc.
A must-see, the salt marshes of Aigues-Mortes reveal a heritage cultivated in the Camargue since ancient times.
Salt production stems from ancestral know-how, passed down through generations.
The color of the water is due to the proliferation of microorganisms like Artemia Salina, a completely natural phenomenon. Today, the annual salt harvest reaches 450,000 tons.
